Description: This soup should be phase 2 or 3 because of the corn, which really makes for a great flavor.
Ingredients: South Beach Diet food list
2 cloves garlic
1 med onion chopped
1tbs olive oil
1 lg can chicken broth
4 breasts of chicken cooked and cut in bit size pieces
1 bunch cilantro
2 sm or 1 large can of corn drained
2 cans recipe cut tomatoes
1/8th cup chili powder or 1 pk taco season mix
2 cups reduced fat jack or cheddar cheese
Directions: South Beach Diet cook book
sauté garlic and onions in lag stock or soup pot until soft. Add broth, tomatoes, corn, chili powder, and chicken. Simmer for at least an hour. Add cilantro and continue to simmer 15 mins.
Serve garnished with celantro and cheese. (Avocado and or low fat sour cream if you are feeling very decadent!!!)
